Poultry takes flight
The spectacular growth of the Nashville-style hot chicken restaurant chain Dave’s Hot Chicken, reaching nearly 300 locations in just five years, is a testament to the speed at which new restaurant concepts can scale under a franchise model. Social media also played a key role in helping Dave’s spread its wings. It is also another example of how poultry is now the world’s most consumed meat, having overtaken pork in 2016. Poultry is responsible for the growth of meat consumption worldwide, particularly in Asia, and is expected to account for 41% of all protein consumed from meat by 2032. The silver lining is that poultry has the smallest carbon footprint of the main types of meat. Poultry’s lower carbon footprint is partly a function of the amount of dry matter feed required per kilogram of edible weight at 3 kg compared to 25 kg for beef.
